WHAT IS EISWEIN?
SWEET, 'THICK', WINE,
For Eiswein, the grapes are harvested frozen and immediately pressed. The frozen water in the grape juice remains as ice in the wine press. Only the intensely sweet juice packed with sugar is still liquid. Eiswein is made from this. Eiswein contains little alcohol, sometimes only 5.5%, and lots of unfermented residual sugar, at least 160 grams per litre.
GOLDEN YELLOW, INTENSE

LOTS OF RESIDUAL SUGAR.
Harvest of frozen grapes takes place in November, December or even in January.
Only when it has frozen below at least 7 degrees can the grapes for Eiswein be harvested.
