HOW DO YOU MEASURE SUGAR IN
THE VINEYARD?

FEEL

pick a grape, squeeze it and rub the skin between your thumb and forefinger.


If it feels smooth, the grape is ripe. If there is a lot of resistance not yet.

TASTING

pick a grape, taste it, bite into the seeds and the stalk. If they taste green and raw, the grape is not yet ripe.

MEASURING

Measuring with a refractometer, a small device for determinig the sugar content. Pick a few grapes. Grind them well. Place the pulp on the prism of a refractometer. Close the cover.

Hold the meter up to the light and read the sugar content. The amount of sugar indicates how ripe the grape is and what the alcohol content of the wine can be.
