Acids in wine = tartaric acid, malec acid and lactic acid.

But: sweet and sour also influence each other.

This can make the taste different from what you expect.

SWEET TASTE =

unfermented sugar + little acid

MILD TO DRY TASTE =

unfermented sugar + lots of acid


OR

no sugar + little acid

CRISPLY DRY to SOUR TASTE =

no sugar + lots of acid
